Dressing up for a special occasion or using decorations to celebrate holidays or parties are so much fun! I will always look for an excuse to put on some heels, a nice dress and a new coat. And although I am not one to complain about wearing everyday jeans, a sweatshirt and other more comfortable attire, there is something exhilarating about switching up an old routine every now and then. We all experience this during the holidays or with events that don’t occur very often. These new happenings build a sense of anticipation and excitement in our minds and allow for a change of pace in our normal lifestyles.

And that brings my point to brie. A classic cheese that makes its appearance at many of these events and occasions. The flavor is subtle enough for non-cheese enthusiasts to still enjoy yet still has just the right taste for any cheese lover to keep craving bites of it over and over again. Eaten plain, it is very delightful but when you dress it up a bit, an exciting new adventure awaits you! Eating brie with crackers is one of my favorite snacks of all time, but every once in a while, I like to make it into something a little more special than the average snack–Baked Brie. And not only baked brie, but baked brie with organic raspberry preserves and candied pecans. This dish is easy brie-zy to make, and can spice up any ordinary evening or entertain any upscale event. So when you feel like adding a little more glamour to that everyday snack, try making this brie recipe!

Baked Brie with Raspberry Preserves and Candied Pecans:

1 Wedge of Brie Cheese
Raspberry Preserves or Jam
Candied Pecans (store bought or homemade by mixing pecans with melted butter and brown sugar)
1 Baguette
Assorted Crackers

Preheat oven to 350 degrees. Put wedge of brie in an oven safe pan (cake pans or glass/ceramic dishes work well). Bake for about 10 minutes or until cheese starts to slightly melt. Spoon a layer of raspberry preserves on the top of the cheese and sprinkle as little or as many pecans on top on the perserves. Bake for another 5 to 7 minutes. Slice baguette on the bias into bite-sized pieces. Put everything on a serving plate along with crackers. Serve warm.

  1. Cheese: love. Anything raspberry: double love! The next time I’m feeling less lactose intolerant than most days I will try this. Food, thou art my weakness.

  2. Oh my. I could eat crackers and brei all day. But warm with raspberry jam on it?! I’m in heaven!
