Now, back to the Thai iced teas…if you’ve ever tried them, then you know they’re pretty delicious. Here’s the guest post I wrote :
Creamy, sweet, rich, and ORANGE. I love every aspect of it. As a huge fan of Thai food and anything spicy, Thai iced tea is a perfect compliment to any meal. This black tea is brewed, sweetened, and then served over ice. Whenever I go out to Thai food, this drink calls to me and more often than not, I give in and order one. Or two! And furthermore, my heart really races with excitement when a restaurant offers bottomless Thai iced teas–it’s seriously like Christmas for me. I just love Thai iced teas!
But at $3 (or so) bucks a pop, they are not awesome for my wallet. So I decided that there had to be a better way to get my fix. I decided to take a stab at making it myself and immediately ran to the store. I got the main ingredients at a local Asian market–loose Thai tea leaves (a huge bag for a mere couple of dollars), a can of sweetened condensed milk, and a small carton of half and half. With only 3 ingredients, it’s so easy…

I use to work at a restaurant that served Thai teas so I was familiar with making them. The only step I had never done was brew the actual tea itself! “I make tea all the time, this should be a piece of cake,” I thought to myself. Well, little did I know that I had some learning to do.
I did some research (aka Google-ing) and saw that most recipes said to brew the tea for about 5 minutes. Well, after steeping the loose leaf teafor 5 minutes, the tea looked like the right color but when I tasted it, it was extremely weak when I added the rest of the ingredients (not to mention the ice that watered it down even more). So, I went back to the restaurant where I use to work and asked the cooks. And this is what I found out: the key to brewing Thaitea is using a large amount of tea leaves and simmering it for a very long time. The restaurant suggested steeping the tea leaves for over an hour, but I didn’t have enough time for that, so I tried an express method of simmering it for 30 minutes. And it worked!
Now I can have my weekly fix of Thai iced tea, and it tastes just as good as it does when ordered in a restaurant, if not fresher. And now you can make it at home too!
Thai Iced Tea* (serves 3-4)
- 8 Cups of water
- 3/4 Cup thai tea leaves
- 1 Can of sweetened condensed milk
- 2 Tablespoons of half and half (for each serving)
- Ice cubes
Bring 8 cups of water to a boil. Place the tea leave either directly into the water or use a large tea strainer. Boil for about 5-10 minutes and then bring down to a simmer for 20 minutes or longer. (The longer you boil it, the more concentrated the tea will get which is better for flavor, but you will have less tea overall at the end because a lot of the liquid boils out.)
Once tea is done simmering, remove from stove and strain the tea leaves out of it. Then let it completely cool. You can even refrigerate it if you want.
For individual servings, take a glass and add 1 cup of the Thai tea concentrate, 1/4 cup of condensed milk, and 2 tablespoons of half and half. Mix together well, and then fill the rest of the glass with ice.
The mixture should be rich, sweet, and creamy. The ice cools it down and dilutes it a little bit. It’s just a perfect drink for any summer evening or meal!
*There is a variation to this recipe: some places add sugar to their tea…personally, that’s too sweet for me since the condensed milk already adds a lot of sweetness, but by all means go for it if you like your Thai teas nice and sweet!
