Chocolate Stout Cake with Baileys Irish Cream Chocolate Ganache

It’s March. WHERE HAS THE TIME GONE?! Life is weird and Mercury is in retrograde but this cake makes up for all of it. ;) Plus, this weekend is St. Paddy’s Day so it’s a perfect excuse to make some cake. This cake is delicious and super rich so all you need is a small slice (aka it will feed a huge group of people)! Three layers of a moist, fluffy chocolate stout cake with rich and creamy chocolate ganache in between. Oh, and did I mention that the ganache has irish cream in it??? If you’re looking for a cake that really tastes like Guinness or Baileys Irish Cream, you’re in the wrong place. The addition of stout and Irish cream in this particular recipe just really brings out a deeper and richer chocolate flavor overall. That’s actually one of my favorite aspects about it. Ganache tip #1: There [Continue Reading…]

Pumpkin Cheesecake

It’s Friday (TGIF!) so we’re celebrating :) I KNOW, I KNOW, I KNOW…pumpkin was so last month. But you know what? Pumpkin will never go out of style, no matter what people say. And neither will cheesecake. It’s just the truth. I’m so ready for the weekend! Life has been a little hectic and busy lately. But I guess life has to be crazy every once in a while or else it wouldn’t be any fun, right? I’m excited to grab some dinner with friends tonight and then spend the weekend baking my little heart out. And watching Christmas movies, of course. And listening to this songĀ (I just LOVE it!!). Oh, and I’ll also be channeling all of my strength towards NOT buy everything from Sur La Table regardless of how many sale/find the perfect gift emails and catalogs they send me! You guys, I also have something really, REALLY [Continue Reading…]

(Vegan) Chocolate Stout Bundt Cake with Baileys Icing

Ok, I don’t know if Guinness is 100% vegan (whoops!)…actually, I’m pretty sure it’s not thanks to my good buddy and his internet research skills! Aaand while we’re at it, Baileys Irish Cream doesn’t really make the vegan cut either… BUT BUT BUT…if you want the cake to be vegan, replace the Guinness with warm coffee and instead of the icing, drizzle melted chocolate or simply dust the cake with some powdered sugar. This is adapted from Joy the Baker’s Vegan Chocolate Cake recipe. It’s the perfect recipe because she created the recipe hoping that you would be able to find all (or at least almost all!) of the ingredients already in your pantry. She’s such a genius :) I tweaked it a little in honor of St. Patrick’s Day! I added a little stout, a little Irish cream, and some festive green sprinkles…yum! I also reduced some of the [Continue Reading…]

Tres Leches Cake

Today’s Reader Guest Post for The Holiday Project: Alberto from Woodland, California [I can vouch for this cake. I’ve eaten it, and it’s deliciously moist! Oh, and what a friendly reminder that guys like to bake too! All you other guys out there, step it up. Thanks, Alberto!] ***************************************************************************************** I am a January baby. Being so, I enjoy the crisp cold air of winter and the dark gray tint of the winter sky. While many people get a sort of depression upon the return of Jack Frost, I relish in the incoming cold weather. Alright! I know I have a strange fascination with cold weather, and at this point I should explain that I was born and raised (and currently go to school) in California! I can sense the non-Californians chuckling at the idea of a California winter, I know, I know.. I might not have the full experience of [Continue Reading…]

Rum Cake

Today’s Reader Guest Post for The Holiday Project: Monica from Walnut Creek, California [This recipe is soo good. Monica’s rum cake has always been a crowd pleaser, and a perfect addition to any event, party, or every day treat! Happy Monday!] *********************************************************************** Every year as the holidays kick into gear, I whip up my favorite bundt cake. My mom used to make the cake every winter for our holiday gatherings and allowed me to steal the recipe a few years back. Let me tell you, this bundt cake never gets old. When I realized just how easy it is to make, it became my go-to dessert for the holidays. The cake is moist with rum flavor and the nuts on top give it a nice little crunch that compliments the otherwise smooth texture of the cake. I dare you to not eat the entire cake in one sitting. If it [Continue Reading…]
