Chocolate Stout Cake with Baileys Irish Cream Chocolate Ganache

It’s March. WHERE HAS THE TIME GONE?! Life is weird and Mercury is in retrograde but this cake makes up for all of it. ;) Plus, this weekend is St. Paddy’s Day so it’s a perfect excuse to make some cake. This cake is delicious and super rich so all you need is a small slice (aka it will feed a huge group of people)! Three layers of a moist, fluffy chocolate stout cake with rich and creamy chocolate ganache in between. Oh, and did I mention that the ganache has irish cream in it??? It’s Friday (TGIF!) so we’re celebrating :) I KNOW, I KNOW, I KNOW…pumpkin was so last month. But you know what? Pumpkin will never go out of style, no matter what people say. And neither will cheesecake. It’s just the truth. I’m so ready for the weekend! Life has been a little hectic and busy lately. But I guess life has to be crazy every once in a while or else it wouldn’t be any fun, right? I’m excited to grab some dinner with friends tonight and then spend the weekend baking my little heart out. And watching Christmas movies, of course. And listening to this song (I just LOVE it!!). (Vegan) Chocolate Stout Bundt Cake with Baileys Icing

Ok, I don’t know if Guinness is 100% vegan (whoops!)…actually, I’m pretty sure it’s not thanks to my good buddy and his internet research skills! Aaand while we’re at it, Baileys Irish Cream doesn’t really make the vegan cut either… BUT BUT BUT…if you want the cake to be vegan, replace the Guinness with warm coffee and instead of the icing, drizzle melted chocolate or simply dust the cake with some powdered sugar. This is adapted from Joy the Baker’s Vegan Chocolate Cake recipe. It’s the perfect recipe because she created the recipe hoping that you would be able to find all (or at least almost all!) of the ingredients already in your pantry. She’s such a genius :) I tweaked it a little in honor of St. Patrick’s Day! I added a little stout, a little Irish cream, and some festive green sprinkles…yum!
