It’s Friday (TGIF!) so we’re celebrating :) I KNOW, I KNOW, I KNOW…pumpkin was so last month. But you know what? Pumpkin will never go out of style, no matter what people say. And neither will cheesecake. It’s just the truth. I’m so ready for the weekend! Life has been a little hectic and busy lately. But I guess life has to be crazy every once in a while or else it wouldn’t be any fun, right? I’m excited to grab some dinner with friends tonight and then spend the weekend baking my little heart out. And watching Christmas movies, of course. And listening to this song (I just LOVE it!!). Happy Monday, Everyone! Do you guys hate Mondays as much as I do? Yeah, I feel ya. But coffee helps, right? Well, to help you get through your Monday, I’m sharing something I discovered about a certain Fall favorite. Ohhh, boy, I have found the secret! To a pretty freaking good mock pumpkin spice latte, that is. Like, just as good. And ridiculously cheaper. Without all the hoopla of making your own syrups or pumpkin puree and whatnot. If you’re like me, you waited a while after the pumpkin spice latte came back to Starbucks this Fall to purchase one because at a whopping $4.95 for a grande sized drink, it’s hard to justify such a treat. Ah, yes, my love for pumpkin is sneaking up on me again. Remember when I said that I always seem to have some sort of left over pumpkin puree after I make something with it? Well, here is an amazing way to get rid of it. Pumpkin chai milkshakes! This was seriously made in about 5 minutes. If you add in the prep and clean up time, I would say it’s a 15 minute project–AT THE MOST. And I absolutely love chai–to the moon and back–so this recipe is a nice change to my normal chai lattes. Do you guys ever get chai concentrate and make your own lattes? I always do! It’s SOO much cheaper than buying chai in a coffee shop. Alright, alright. I know I’m going a little overboard with all the pumpkin lately, but when you get giant cans of pumpkin and don’t have to use all of it for one recipe, you make something else. Then you need to get a small can because the leftovers from the first recipe weren’t enough but you don’t need the ENTIRE second can, so there are leftovers again. And so it goes…c’est la vie. These muffins are awesome. Moist, full of pumpkin and fall spices, and easy to make. The pecan streusel topped everything off and made the muffin spectacular. Plus, this recipe taught me how to spell streusel! S-T-R-E-U-S-E-L. Round of applause for me. Really though, enjoy these muffins with a nice cup of tea or coffee and you won’t be sorry. It’s officially Fall, and I love this season! Bursts of sunny weather are still lingering to tease us, random rainstorms keep us on our toes, and the autumn leaves are truly a beautiful sight. There’s something about it that I just adore. It’s that time of the year that allows us to curl up under a blanket with some hot chocolate and read a good book, an opportunity to start buying the unnecessary winter clothes that we must have, and (for all of you sports fans out there) it’s the beginning of football, basketball, and hockey season (Go Sharks!).
