Quinoa, Black Bean, and Corn Stuffed Jalapenos

I have a strange obsession with jalapeno poppers. They’re just so easy to make and great for so many occasions. But sometime they aren’t necessarily the best for you. Cream cheese? Delicious. Bacon? I’ll take 100 please. However, I can’t justify eating regular jalapeno poppers all the time. So I present to you…guilt-free poppers! These jalapenos are stuffed with a combination of quinoa, black beans, and corn and then topped off with some monterey jack cheese. They make a perfect appetizer or snack! I can also imagine eating them with eggs in the morning or as a side dish. The quantity pictured in this post? Yeah, I almost ate all of them by myself. No regrets. Baked Pumpkin Mac and Cheese with Sage

Y’all know it’s that time of the year. Thanksgiving is tomorrow (I can’t WAIT!!), the weather is getting chillier, and comfort food is a must. So whether you’re looking for a last-minute side dish to bring for dinner tomorrow or if you’re simply craving something cheesy, this is your dish. It’s made with whole wheat shells (you can use regular pasta too!) and there are three kinds of cheese. I had about 10 people taste test this dish, and I think it’s safe to say that this recipe is a keeper. The dish also feeds a ton of people so if you’re going to a big event, this mac and cheese is perfect! Panzanella with Tomatoes, Cucumber, and Pickled Red Onion

Panzanella…this summer salad is a keeper! I mean, honestly, what’s not to love about a salad where one of the main ingredients is…bread?! Yes, this is my type of salad. It’s perfect on a hot day or as a quick and delicious meal. I kept it very simple, and I really enjoyed the outcome. Fresh ingredients are key to this dish! And the croutons? I absolutely love homemade croutons. You probably didn’t know that. Or have to know that. But now you do. Homemade croutons really are glorious, and I may sound like a crouton snob when I say this…but once you’ve tried homemade croutons, you’ll never want to buy croutons from the store again! Lemon, Kalamata Olive, and Parsley Quinoa Patties

It’s Monday! How’d everyone’s Super Bowl weekend go? Were you guys happy or depressed that the Giants won? Here’s an even better question–what’d you guys think of Madonna?! Incredible, right? Um, can she teach me how to dance and sing like that at age 53??? WOW. She rocks. So usually, I despise Mondays, but this Monday is a little different for me. Energy Bites and Balance

Energy bites. Because we deserve to keep our bodies healthy. Because we deserve to divulge in something sweet. Because they’re delicious. Because they’re cute and small and look like they should be a truffle or something. Because they’re kind of awesome. Because we’re rock stars. I’m not very good at exercising. Period. When it comes to will power, I can think of anything under the sun as an excuse not to work out. Like shopping.
