Brunch: Roasted Sweet Potatoes and Kale with a Fried Egg

First of all…Happy Father’s Day to all of the dads out there! My dad actually passed away when I was 5 years old. I think about him often but I am also lucky enough to have a Stepdad in my life so this day is exceptionally meaningful to me. I hope everyone is celebrating and having a wonderful Father’s Day weekend! Second, I am leaving for Peru tonight with my best friend Megan! IAMSOEXCITED! We’ll be spending some time in Peru and then a few days in Quito, Ecuador where we’ll meet up with our good friend Kristina who’s been living there. This blog will be a little quiet for the next two weeks but I’ll be sure to post about my Sudamerica adventures as soon as I can! You can also follow me on Twitter or Instagram. Finally, this dish. Roasted sweet potatoes and kale are some of my [Continue Reading...]

Backpacking in Big Sur

Living in California is truly amazing. Last Saturday, my friends and I hopped in the car at 6am and drove a few hours down the coast to Big Sur for the weekend. We dropped in at Bottchers Gap and hiked down a road to Boy Scout camp. The camp area wasn’t being used but we got to see where all the boy scouts stay when they visit Big Sur! Very cool. Then we followed the Little Sur trail to make our way to our campsite. The surrounding was unreal. So green and lush! The trail was a little challenging due to fallen trees from a big fire that happened a while ago but it was actually a lot of fun hopping over tree trunks and pushing branches aside. Sometimes the redwood trunks were so big we had to help each other get over them or even throw our packs to [Continue Reading...]

a quick weekend getaway.

I got to spend all of last weekend at a cabin that sits right on the edge of Lake Pinecrest in Pinecrest, CA (near Yosemite). We went hiking, swimming, kayaking, and somehow even managed to incorporate bacon into every single meal on the trip (um, dream come true?). There was no phone or internet service so it was just us and the lake. If you haven’t disconnected from technology in a while, I suggest you do so immediately. It feels amazing, and it was so wonderful spending time with a group of close friends in such a beautiful place. I’m so lucky! Missing this place and the people already. Hope everyone had a safe and fantastic Labor Day weekend! :) -Steph

Sushi, a 6-Hour Road Trip, and My Best Friend's Birthday!

In first grade, she hated me and I didn’t even realize it. I’d walk by, smile, wave at her, and she’d never really wave back! I didn’t think much of it–you know how first graders are. But then, something happened in 5th grade and a best friendship was started. Perhaps it was when she invited me over to her house after school and we discovered our obsession love for folding printer paper in half, drawing our own grids, and playing endless games of Battleship all afternoon together (why we never actually bought the real game is beyond me). Or maybe it was our ability to order two Little Caesar’s $5 pizzas (one for each of us) on a Saturday afternoon and finish it all in the same day while watching movies and ya know, just hanging out. Oh, and there was also our shared interest in making up choreographed dances to 90s pop music. [Continue Reading...]

‘Banh Mi’ — A Gourmet Vietnamese-Style Sandwich

Today’s Reader Guest Post for The Holiday Project: Nicole and Sheeter from Davis, California [These two make an awesome team. Sheeter makes the best homemade BBQ sauce and ribs while Nicole bakes up the most delicious treats. It's always so much fun going on food adventures with them!] *********************************************************   Banh mi (pronounced ‘ben me’ most places [although its southern pronunciation ‘bang me’ is, arguably, way funnier]) literally means bread in Vietnamese. But it’s much more than bread. It’s spicy and sweet, sour and savory, crunchy and chewy … all at once, which is probably why this Southeast Asian sandwich has such a cult-like following. Banh mi shops can be found in virtually any major city like say, San Jose, CA, home to some of the best banh mi outside of Vietnam and, more importantly, Lee’s Sandwiches, the most successful banh mi chain ever. Full disclosure: There may be some [Continue Reading...]
